For years, I’ve used a gas grill for all things barbecue. This year, I reverted to a charcoal grill and couldn’t be happier.. Gas, I think takes away from the BBQ experience. With charcoal, the chef has to know whats going on or else the entree will either be under or over cooked. It take patience and some knowledge of the grill to make any BBQ experience a success. I don’t think I’ll ever go back to gas. But then, never say never, you know? It’s just that cooking with charcoal, with a little bit of damp mesquite for added flavor, is the way to go from mediocre to great.
